Pizza 00 MIDI H12 flour is high in proteins, and perfect for pizza, bread and pastry with long time rising.  We recommand you to prepare the pizza dough at least 24 hours before using it.  The pizza dough prepared with that flour can be kept in the refrigerator at a maximum temperature of 4 C for about 4 days.
