It is considered  a condiment rather than a vinegar as its degree of acidity is below 6%.  To make it, the same grape musts are used then filtered in order to clarify it.  The difference resides also in the absence of aging.  Its taste is fresh and bittersweet.  When used, it has the advantage of not modifying the colour of the food it is added to.
