Small onions in Bellei balsamic vinegar

Small onions (cippolline borretane) in balsamic vinegar are a specialty from Modena.  In the past, these onions were preserved in vinegar for consumption during the winter, but today it is done because these onions are simply delicious.

We suggest them to be used as an appetizer, served around a raclette or fondue, in the preparation of a roast (don't forge to add the juice from the jar) or to deglaze veal cutlets.  They are also very good in a beet and endive salad.
